Ingredients
Grilled Pork Chops
- 4 bone-in pork chops, preferably 1.5-inch thick
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Honey Garlic Glaze
- 2 tablespoons unsalted butter
- 4 cloves of garlic, minced
- 4 tablespoons honey
- 4 tablespoons chicken broth
- 2 tablespoons apple cider vinegar
Helpful Tools
- 1 MEATER Plus Bluetooth Thermometer, optional
- 1 ThermoPro Instant Read Thermometer, optional
Steps
1. Preheat the grill
Preheat a grill on high heat to 475 degrees Fahrenheit or the highest temperature the grill will reach.
2. Bring the pork chops to room temperature
Remove the pork chops from the refrigerator and allow them to come to room temperature for 30 minutes.
3. Season the pork chops
Drizzle the olive oil over the pork chops and rub to apply an even coat. Season each with salt and black pepper.
4. Sear the grilled pork chops
Lay the pork chops on the grill, close the lid and sear for 2 minutes. Turn each pork chop onto the other side and sear for an additional 2 minutes.
5. Continue grilling the pork chops
Transfer the pork chops to the warming rack, reduce the heat of the grill to medium (350 degrees Fahrenheit), and close the lid. If you don’t have a warming rack, you can turn off the heat on one side of the grill and place the pork chops there for an indirect cooking method.
6. Rest the grilled pork chops
When the grilled pork chops reach an internal temperature of 145 degrees Fahrenheit, remove them from the grill and allow to rest for 20 minutes.
7. Make the honey garlic glaze
While the Grilled Pork Chops are resting, place a saucepan over medium heat and add the butter. Stir in the minced garlic and cook for 1 minute until fragrant. Add the chicken broth, honey, and apple cider vinegar, bring to a simmer and cook for 5 minutes or until thickened.
8. Serve the grilled pork chops
Brush the honey garlic glaze onto each pork chop and serve. Enjoy!
Notes
Can I use a smoker to make these grilled pork chops?
Yes, instead of grilling the pork chops over charcoal or propane, you can definitely use a smoker or pellet grill. I recommend using the reverse-sear method which will allow the to absorb more smoke before searing. You can follow the steps in my Traeger Pork Chop recipe.
Which cut of pork chop is best for grilling?
There are four main cuts of pork chop to choose from: shoulder chop, rib chop, center-cut loin chop, and boneless chop. The best for grilling are rib chop or center-cut loin chop as the bone in the pork chop produces a better flavor and juicier meat. Our recommended size when purchasing a pork chop is 1.5-inches thick, which will help prevent the meat from drying out while grilling.
How to cook pork chops on an indoor grill?
When cooking pork chops on an indoor grill, it is best to begin with a thinner chop of approximately ½-inch thick for quick, even cooking. Preheat an indoor grill over medium heat and lay the pork chops on the grill. Cook the pork chops for 5 minutes then flip to the other side and cook for 5 more minutes. Then transfer the pork chops to a chopping board and allow them to rest for 5-10 minutes before serving to lock in the juices.
How to check when pork chops are done without a meat thermometer?
Our basic guide to cooking pork chops is to grill over high heat for 2 minutes each side then transfer to an area of indirect heat to finish cooking for 5 minutes for every 1/2 inch thickness. The most accurate way to check the internal temperature of grilled pork chops is to use a meat thermometer inserted into the thickest part of the meat. Pork should read anywhere between 145F and 160F. If you don’t have a meat thermometer then a simple touch test can be applied to check the cooking of the pork chops. Press into the center of the pork chop with your finger or tongs. If the meat is firm then it is cooked through. If the meat is soft then the pork chops need more time on the grill. If the meat is hard then the pork chops are overcooked.
